The holidays are around the corner and comfort food is in the air. How many of you start preparing recipes for the holidays nice and early? You know what I mean. Picking and choosing which recipe will be utilized on which holiday is one of my highlights of the year. I love thumbing through recipes and creating menus. This year I bought a new recipe book to help with the fun. I purchased David Venable’s In the Kitchen With David, Comfort Foods That Take You Home cookbook and I am glad I did. I found tons of comfort food recipes but one recipe definitely stood out. David’s Chocolate Cake! Ooooo if you watch David on In the Kitchen With David, you know I am doing the “happy dance” right now. This cake is amazing. It was so amazing that I made it without icing. David gives a delicious icing icing recipe but I am a fan of icing less cake. Imagine leaving this cake for Santa instead of cookies this year.
Dry Ingredients:
- 2 1/2 cups of all purpose flour
- 1 1/2 cups of unsweetened cocoa powder (not Dutch process)
- 2 tsp baking soda
- 1 tsp baking powder
- 1 1/4 tsp salt
- 3/4 cup of vegetable oil
- 3 cups of sugar
- 3 large eggs
- 1 1/2 tsp of vanilla extract
- 1 1/2 cups of buttermilk
- 1 1/2 cups of warm coffee
In a mixer, mix together the wet ingredients listed above.


Beat the wet ingredients until creamy and light.

Add the 1/3 of the dry ingredients to the bowl.

Beat the ingredients and add 1/3 cup of the buttermilk. Beat the ingredients and add 1/3 cup of the warm coffee. Continue this process until all remaining ingredients have been used.

Bake the batter on 350 degrees for 40-50 minutes or until a toothpick inserted in the middle comes out clean.

David Venable was kind enough to enclose a delicious icing recipe complete with tons of chocolate but I chose to make my cake without icing. I think it will be a great after dinner nibble of deliciousness.
